May Cookie of the Month: Lemon Blueberry
The past few weeks, several of my co-workers have asked me if I remember the Lemon Blueberry cookies I made last December.
I do remember those cookies! I created the recipe on a whim, after noticing that Woodman’s had lemon baking chips for sale, and wondering how they would pair with sweetened dried blueberries.
Earlier this week, a couple of my colleagues mentioned that they had heard about my Lemon Blueberry cookies. Realizing that these cookies were still being talked about four months after I had baked them, I decided to make them our May Cookie of the Month.
I would describe these cookies as a bright, refreshing "burst of sunshine." They combine the tang of lemon with the moderate sweetness of blueberries.
