June Cookie of the Month: Strawberry Cheesecake Wedding Cookies
June is Dairy Month, making it the perfect time to celebrate one of Wisconsin’s finest ingredients: butter.
This month’s cookie is a Strawberry Cheesecake Wedding Cake cookie. It is a delicate, buttery cookie that practically melts in your mouth. Freeze-dried strawberries provide bright, sweet-tart berry flavor, while rich cheesecake notes add a creamy finish that makes each bite taste like a slice of strawberry cheesecake wrapped in a classic wedding cake cookie.

I developed this recipe while experimenting with new wedding cake flavors during one of the busiest baking weeks of the year. As I prepared more than 1,500 cookies for National Firefighter Appreciation Day, National Teacher Appreciation Day, and National Nurses Day, I began testing variations on the traditional wedding cake cookie. This strawberry cheesecake version quickly became a favorite.

Butter from Weyauwega Star Dairy (won first place honors in both the salted and unsalted butter categories at the 2025 Wisconsin State Fair Dairy Products Contest)
